Pork Burgers with Fennel, Cucumber & Red Onion Slaw

 

PORK BURGERS WITH FENNEL, CUCUMBER & RED ONION SLAW

Makes 8 burgers
Takes 20 minutes

INGREDIENTS:

1 cucumber, very thinly sliced
1 fennel bulb, cored and thinly sliced
1/2 medium red onion, thinly sliced
1/4 cup sour cream
2 tablespoons mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon stone ground mustard
2 tablespoons finely chopped fresh dill
1 tablespoon capers, roughly chopped
1/2 teaspoon kosher salt
5 twists freshly ground black pepper
2 pounds ground pork, divided into 8 patties
8 brioche or kaiser burger buns (something hearty)

INSTRUCTIONS: 

  1. Preheat a grill to high heat. 

  2. While the grill preheats, prepare your slaw, by combining cucumber, fennel and red onion in a medium bowl. Combine sour cream, mayo, vinegar, mustard, dill, capers, salt, and pepper in a small bowl and whisk until smooth. Add to cucumber mixture and fold gently until veggies are well-coated. Set aside.

  3. Place pork burgers directly over heat, and grill 4-5 minutes per side until cooked through and grill marks appear.

  4. Toast buns on grill or in toaster. 

  5. Serve pork burgers on toasted buns with a hefty portion of slaw heaped on top.
